My lemon drizzle cake is the one thing which I’m always asked to make by various family members for occasions like birthdays and Christmas’ and my dad alone can go through an entire cake in a single sitting. I’ve made this cake so many times now I rarely ever have to look at a recipe and most of the time I end up tripling the ingredients so that I can make three cakes to give to various people.
Lemon is one of my favourite tastes and while I love chocolate desserts I find lemon cake really refreshing and never sickly. I’ve never tackled a lemon drizzle cake with an icing top but this is something I want to try soon, if anyone has any recipes or recommendations throw them my way.
Lemon Drizzle Cake
- 100 Grams Caster Sugar
- 100 Grams Self Raising Flour
- 100 Grams Cooking Butter
- 2 Eggs
- 1 Lemon
- 25 Grams Icing Sugar
- 25 Millilitres Lemon Juice
Cream the butter in a bowl so it's light and soft
Add in the caster sugar and mix together
Then add in the self-raising flour slowly and mix in
Add the first egg and mix in, then add the second and continue to mix until the dough is creamy in texture
Add in some lemon juice until you can smell it when you put your nose close to the bowl
Grease or line a cake tin and pour the mixture inside. Bake for around 20 minutes on 200 degrees but keep an eye on it. You want to remove it when you can push a fork into the middle and it comes out clean
While the cake is cooking make the drizzle by freshly squeezing one lemon, slowly adding in a teaspoon of icing sugar at a time and mixing in it. You want to continue this until the mixture is sticky but still runny, and there are no white icing lumps
Once the cake is cooked pierce it with a fork all over the top and leave it to cool
Once cool pour the drizzle topping over the top of the cake gradually so it seeps into the cake
