Delicious Double Chocolate Cheesecake

For the past few months, I have been cooking a lot more at home, mainly because it’s so much nicer to cook for two than it ever was for one, and as I now have a halo fryer there are so many more recipes I wanted to try out. While my general cooking bloomed I still wasn’t doing a lot of baking despite the fact that I absolutely love it. While I am trying to be healthy and stick to Slimming World I am not going to punish myself too much so I am having the odd cheat day because I’d rather it take longer to loose weight but enjoy myself than deny myself treats. This is where my double chocolate cheesecake comes in. I knew I was having a day at home and would want some treats in after doing a 13-hour lord of the rings movie marathon through the night so I made this the day before ready for that sugar kick.

Double Chocolate Cheesecake

  • 2 Packs Oreos
  • 80 Grams Butter
  • 2 Tubs Lightest Philadelphia
  • 30 Grams Caster Sugar
  • 240 Grams Heavy Whipping Cream
  • 1.5 Bars Milk Chocolate
  • 1 Bar White Chocolate
  • 1 Dash Mint Essence
  • Chocolate sauce to decorate
  1. Crush the 2 packets of oreos and combine with some melted butter (around 50g). Add the butter in slowly until the base sticks together but it isn’t so sticky that it transfers onto your hand.

  2. Press the base into a cake tin and refrigerate for about an hour.

  3. Mix together 200g (1 and a bit tubs) of Lightest Philadelphia with 20g of butter, 20g of caster sugar and some mint essence (or any other type of flavouring).

  4. Melt 1.5 bars of milk chocolate and mix into the cream cheese mixture.

  5. Whisk 160g of Heavy Whipping Cream and add to the mixture making sure it’s fully mixed in. Then spread over the top of base and put back into the fridge for an hour.

  6. Make the final layer by adding the rest of the tub of Lightest Philadelphia, 10g of butter and 10g of caster sugar. Then mix in one bar of melted white chocolate.

  7. Whisk 80g of Heavy Whipping Cream and add to the mixture before spreading on top and putting it back into the fridge.

  8. An hour later you can add some decorations so I added chocolate sauce.

And that’s that my delicious double chocolate cheesecake. It might have been quite a lot of sugar but it was a great treat and something I enjoyed making and loved eating.

    Sounds so lovely. My favourite is very similar, only my topping is made with marscapone and white chocolate, whipped together with a little cream and decorated with strawberries.
