I’ve been doing Slimming World on and off for a number of years and during that time a lot of my habits regarding food have changed. I used to be more about convenience food I could bung in the oven. But now I enjoy cooking so much. We have done Gousto and meal subscription services in the past but sometimes it’s just cheaper to do it all yourself. Here are two inexpensive healthy slimming world friendly meals I’ve been loving lately.
I’m only starting to dabble into curries as usually I’m not that great with spices. But the great thing about doing it yourself is you can be as generous as you want with all of the spices. And generally I’m quite tame when it comes to curry powder and chillies. I found this curry incredibly easy to make in about 20 minutes but also not too saucy like a lot of curries usually are. And this is one of the inexpensive healthy slimming world friendly meals I’ve made quite a few times lately.
It starts with cooking your halloumi then setting it aside. For Slimming World I use enough for both my healthy extra A’s and then double it as it makes two portions. Then you fry a diced onion and when it’s softened add in 2 garlic cloves, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp ground tumeric and half a tsp of crushed chillies/ chilli powder. Once the spices have coated the onion add in 3 tbsp water and a small bag of halved cherry tomatoes. You leave it for about 5 minutes until the tomatoes start to break down. Then reduce to a medium heat, add back in the halloumi and add the spinach in handfuls for it to wilt. It’s up to you how much spinach you want to put in.
And it’s as simple as that. Once you have all of the spices on the rack the rest of the fresh ingredients will cost you about £4 to buy so it’s a pretty cheap meal. Plus you can customise it as much as you want. For example I added in chicken to one version of mine, or you can add different veg or spices to make it your own. This dish actually won me the Slimming World Free Food Festival certificate which I was very happy about.
Mac and cheese doesn’t sound like a very healthy meal but if you use the right kind of cheese then it can be. This is a super easy dish and starts with boiling the pasta. Next up I fry up some bits to add into my mac and cheese to pimp it up. I’ve used onion, spring onion, sweet red pepper and bacon before. This just adds another dimension and you can just use up what’s in your fridge. To this you can add some spices or chillies for a bit of a kick.
Once the pasta is cooked I’ll use Primula cheese to mix in. On Slimming World you can use a whole tube of the lighter primula as your two healthy extra choices. So you can go wild. I put enough in to coat all of the pasta, then mix in whatever I’ve cooked. If I’m putting it aside for lunches I’ll put half a tub of primula in so that I can add 45g of lighter grated cheese on top when I microwave it as this will melt. I can make a whole week of lunches for about £5-6 using this recipe which is great.

I love cooking from scratch and have a cupboard full of various jars of spcies etc but always have the crushed chillies at the front as it is one of my main things I use

I tend to make meals from recipes, especially since my wife and I moved into her sister’s house, until our house is finished. I’d love to try that mac and cheese with those spices. My wife isn’t a fan of spicy food, but I am, as long as it’s not too overbearing!
I’m not a huge fan of spicy foods either and so I’m very reserved with my spice addition until I can build up my tolerance x

My daughter is currently following Slimming World, and I am often amazed with the kind of meals she produces. She’s using lots of flavours and tasty ingredients, so this sounds like something she would really enjoy. The Schwartz spice mixes are always really handy to use, the chilli mix ones are delicious.
There is so much choice on Slimming World so you don’t feel like you miss out on too much x
I’m about to cook a sweet potato and spinach curry tonight but I coudl certainly fancy adding some halloumi to it, what a great idea. Mich x

I love cooking from scratch too and often have a curry or pasta dish in my weekly meal plans. These too sound delicious and I like the Schwartz spices mixes too – they’re a great way to add something more to a dish.

I try to cook from scratch as often as possible and love experimenting with food. Like you I used to not tolerate spices very well, but over the years have grown to really love them.
I love the sound of the spinach and halloumi curry, two of my favourite foods in a curry yum! Great that the recipes are inexpensive too.
Great post, I have done slimming world on and off for a few years now and your right, its all about the spices and herbs once you have them stocked up you are ready to roll lol! The spinach and Halloumi curry sounds delicious, I only recently discovered Halloumi but I absolutely love it now!
